3 C old-fashioned oatmeal
1/3 C brown sugar
2 tsp baking powder
3/4 tsp salt
1 1/2 C whole milk
3/4 C water
2 eggs
Cinnamon

*If using fat free milk, add 2 tbsp canola oil or coconut oil.

Mix dry ingredients (except cinnamon) in a medium bowl, then add the water, milk and eggs. Let stand for 5 minutes (very important step!). Spray a 7 x 11 in. baking dish with non-stick cooking spray, and bake 30-35 minutes (oatmeal will barely look golden brown when it's cooked).
Sprinkle with cinnamon, and serve at room temperature along with fruit, nuts, yogurt, milk, etc.

I've been eating this for breakfast every day since 2008. I vary the toppings so it never gets boring: greek yogurt with some kind of fruit and ground flaxseed or walnuts are my favorite ones.
You can adjust the amount of brown sugar- I don't like mine too sweet and 1/3 cup works perfectly.
Also, the least you bake it (30 minutes or a little less), the moister and "tender" it'll be. If you bake it 35 + minutes, it'll be a little drier.
