2 cups of instant rice (Minute Rice)
2 cans of cream of chicken soup
2/3 cup water
10 pieces of bone-in chicken or 6 chicken breasts
1 package of dried onion soup mix

Directions:
Directions:
1. Combine rice and soup, add water

2. Spread mixture in the bottom of a Pam-sprayed 9 X 13 baking dish. Place chicken pieces on top.

3. Shake soup mix packet to combine dried onions and dried mix. Sprinkle soup mix over chicken. Cover tightly with aluminum foil, do not open foil while cooking.

4. Bake at 325º for 2 hours and 30 minutes.

5. Dish is much more moist with bone-in chicken, but children always like boneless chicken breasts. You can also substitute regular rice for Minute Rice, I would use one soup can of water instead of 2/3 cup. Regular rice, however, does not seem to develop the crunchy, chickeny crust that is one the great things about this dish.

This is THE Angelette casserole. The first thing John and Caitlin actually learned to cook. A dish prepared for speech class demonstration, Boy Scout cooking badge and just because. Cabbage Favorite and Chicken Tremendous were revelations to a 20 something who had just joined the family and had been brought up with meat and three - I still love them.
