1 lb. pound pork or turkey bacon
1 large head of cabbage cleaned and shredded
˝ tsp. salt
˝ tsp. black pepper
1 clove garlic
˝ tsp. red pepper flakes

Directions:
Directions:
Fry the bacon until crispy in large frying pan

Pour off most of the grease. Break the bacon into pieces.

Chop cabbage into pieces removing the hard center.

Add cabbage to the pan containing the bacon.

Add seasoning and 1/3 cup of water.

Cook covered over medium heat for 5 minutes.

Stir well, and continue cooking until desired tenderness.

Note: like with most vegetables, the longer you cook it, the more vitamins and minerals you lose.

Southern Fried Cabbage is considered true “soul food” in the purest of forms. Cabbage was one of the vegetables readily available on the Southern plantations and one of the foods slaves were allowed to eat.
