1/2 cup shortening
1/4 cup flour
1 lb cleaned, peeled raw shrimp
1 garlic clove, minced
1/2 cup minced onion
2 tbsp. minced parsley
1/2 cup green pepper, chopped
1 cup water
2 tsp salt
2 bay leaves
1/4 tsp cayenne pepper
1 8 oz can tomato sauce

Directions:

Melt shortening in heavy skillet or Dutch oven over high heat. Add flour and stir until light brown. Lower heat, add shrimp and cook about 3 minutes or until pink. Add garlic, onion, parsley and green pepper, cook 2 additional minutes. Raise heat, gradually add water and then remaining ingredients. Bring to a boil, then cover and simmer for 20 to 30 minutes. Serve over hot rice.
