4 Iowa chops
3/4 c. soy sauce
2 T. olive oil
1 medium onion chopped
1 T. catsup
pepper to taste
2 tsp. minced garlic

Directions:
Mix marinade ingredients and pour over chops. Marinate 4 to 6 hours. Brown chops on grill over medium to high heat for 2 to 4 minutes per side; for thicker chops, 4 to 6 minutes. Stand chop on backbone and cook upright for 12 to 15 minutes. (Dan Dvorak, Iowa City)

Variation: Arrange 6 pork or lamb chops in a single layer in a shallow dish; combine 1/3 c. soy sauce, 1/4 c. sugar, 1 tsp. confectioners' sugar, 1 tsp. minced garlic and 1/4 tsp. salt in a bowl and mix well. Pour over the chops, turning to coat. Marinate in the refrigerator for 4 to 6 hours, turning occasionally. Drain, reserving the marinade. Heat the marinade to a boil in a saucepan over medium heat. Grill the chops over hot coals for 30 minutes or until done to taste, turning and basting with the reserved marinade frequently.
