6-8 boneless chicken breasts
Salt and pepper
2 cans of Cream of Chicken or Cream of Celery soup
8 oz of sour cream
1 roll of Ritz crackers, crushed
2 sticks of butter or margarine, melted

Directions:
Directions:
1. Boil the chicken breasts in water with salt and pepper, until just fork tender (about 20 minutes for boneless breasts, a little longer for bone-in breasts). Cut chicken into bite sized pieces and spread in a 13 X 9 inch casserole dish.

2. Mix soup and sour cream, then pour the mixture over the chicken. Cover with crushed crackers. Drizzle melted butter over the top.

3. Bake for 30 minutes at 350º. If the crackers start to get too brown, cover with aluminum foil. You can lighten the dish by using low fat sour cream and lower sodium soup.
