3/4 c. butter or margarine
1 1/2 c. sugar
1 c. light corn syrup
1 (14 oz.) can sweetened condensed milk

Yield: 100 caramels
Combine first three ingredients in a heavy saucepan. Bring to a boil over medium heat, stirring until the sugar is dissolved. Cook for 10 minutes, stirring occasionally. Reduce the heat to low. Stir in the milk. Cook to 240º to 248º on a candy thermometer (hard-ball stage), stirring constantly in a figure-8 pattern with a wooden spoon. Pour into a buttered (9-inch) square aluminum pan. Cool until firm. Loose the sides of the pan and turn out on a cutting board. Cut into squares with a sharp knife. Wrap in wax paper squares.
