¼ red bell pepper, diced
¼ green pepper, diced
2 tbsp. diced onion
½ tomato, diced
1 tsp chopped garlic
½ tsp dried cilantro
½ tsp dried basil
¼ tsp cumin
½ cooked, shelled and deveined bay shrimp
5 flour tortillas (7½")
½ cup salsa, thick and chunky
2 oz reduced-fat cheddar cheese, grated

Preheat oven to 350º. Spray skillet with Pan. Over medium heat, sauté first three ingredients until tender. Mix in tomato, garlic, seasonings and shrimp. Sauté 1-2 minutes. Remove from heat.

Spoon filling onto each tortilla. Roll tightly, and place seam side down in an 8" x 8" baking dish that has been sprayed with Pam. Pour salsa over tortillas. Bake 10 minutes. Top with cheese and return to the oven for 5 more minutes or until heated throughout.
