TARTAR SAUCE:
1 cup mayonnaise
2 tbsp. freshly squeezed lime juice
1 tbsp. grated onion
½ cup diced green and black olives
½ cup passion fruit juice
2 cloves chopped garlic
½ tsp salt
½ tsp pepper

SALMON:
2 cups sesame seeds
1 cup flour
4 eggs, lightly beaten
6 salmon fillets
Salt, pepper, cumin, oregano to taste


Chili Pepper pasta, or Tomato-Basil pasta, or spinach linguini or regular Tortellini

Directions:
Directions:
Place flour, eggs and seeds in a bowl. Season the salmon fillets on both sides with salt, pepper, cumin and oregano and dredge on one side only first in the flour, then the egg and finally in the sesame seeds. Let dry for 1-2 minutes. Grill the fillets on 2 tbsp. of oil about 4-5 minutes per side, depending upon thickness.

Boil the pasta, place the fish on top and 3-4 tbsp. of tartar sauce.
