3 c. all purpose flour
1/2 tsp. salt
1/2 c. butter
1 egg, beaten
2/3 c. hot water
3/4 c. butter, melted
2/3 c. sugar
2 tsp. cinnamon
6 c. tart apples, peeled and thinly sliced
1/2 c. currants
1 egg white, beaten
powdered sugar

Oven: 350º ~ Yield: 2 strudels
Sift together flour and salt; cut in butter till crumbly. Mix egg and water; add to flour. Knead on lightly floured surface for 5 minutes. Divide dough, cover and let rest 1 hour. Prepare apples and cinnamon/sugar mixture. Cover large table with a floured cloth. Roll 1/2 dough to a 15-inch square. Brush the dough with melted butter. Let rest. Starting from the middle, stretch dough with the back of hands until paper thin. Put half of the apples, currents and sugar mixture six inches from 1 side. Gently fold a 6-inch piece of dough over the filling. Slowly raise the cloth to roll the dough. Place on a baking sheet and seal ends. Repeat with other half of the dough. Brush the tops of the prepared strudels with the egg white. Bake for 45 to 50 minutes. Remove from oven and brush with butter. Sprinkle with powdered sugar if desired.
