Mashed Sweet Potatoes Recipe

3 1/2 lb. sweet potatoes, peeled and cut into 2 inch chunks
6 tbsp. (3/4 stick) butter
1 tbsp. finely chopped or sliced fresh sage
1/2 tsp ground cinnamon
1/8 tsp freshly grated nutmeg
3 tbsp. firmly packed light brown sugar
Salt and fresh ground pepper to taste
1/2 cup maple syrup
1/2 cup toasted chopped pecans

Place sweet potatoes in large pot, add water to cover by 3 inches and bring to a boil. Reduce heat to medium-low and cook slowly until tender when pierced by a fork, 15-20 minutes. Drain well.

While the potatoes are cooking, melt the butter in a small saucepan over medium heat. Add the sage, cinnamon, nutmeg and brown sugar. Cook. stirring constantly for 1 minute. Set aside and keep warm.

Run the potatoes through a food mill or ricer, or mash. Pour hot butter mixture over potatoes, stir to incorporate. Salt and pepper to taste, stir again. then place potatoes in a serving bowl and cover with aluminum foil.

In another small saucepan, combine maple syrup and pecans and heat over medium until just warmed through, Transfer to a small dish. Serve the mashed sweet potatoes immediately and pass the maple-pecan syrup to drizzle on the potatoes.
