Marinated Asparagus Salad Recipe

1 lb. asparagus
1 large tomato
1/2 small red onion sliced thinly
1/4 cup red wine vinegar
1/4 cup olive oil
Juice from 1/2 lemon
1/4 tsp. dry mustard
1/2 tsp. oregano
1/2 tsp. salt
1/4 tsp. pepper

Directions:
Prepare vinaigrette by mixing red wine vinegar, salt, pepper, oregano, dry mustard, and lemon juice. Whisk the olive oil into the mix. Refrigerate half the vinaigrette for when the salad is served. Place the rest of the dressing into a large zip lock baggie to marinate the asparagus. Chop off two to three inches of the asparagus ends. In a large rectangular glass dish, splash a few drops of water on top of the asparagus and cover with wax paper. Microwave for approximately three minutes depending on the thickness of the asparagus. Do not let them get too soft. When they are finished cooking, sprinkle with salt and pepper to taste. Let them cool slightly, and place them in the zip lock baggie with the dressing to marinate in the refrigerator for at least three hours. Then remove the asparagus and drain off the marinade. Place in a large bowl. Slice the large tomato, then cut each slice in half. Salt slices well. Add to the asparagus. Next add the thinly sliced red onion and mix well with the saved vinaigrette. Salad can be refrigerated until you're ready to serve it.
