Gram's Banana Nut Bread Recipe

1 cup butter (2 sticks)
2 cups sugar
2 eggs
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
4-5 very ripe bananas, mashed
1 cup nuts, chopped
3/4 cup buttermilk**

Directions:
Directions:
Preheat oven to 350 degrees
Spray two loaf pans with PAM baking spray

Mix together butter and sugar until light and fluffy
Add the eggs
Slowly mix in the flour, baking soda and salt
Pour in the buttermilk while the mixer is running, mix well
Add the bananas and nuts, mix well

Pour into loaf pans
Bake in a 350 degree oven for 50-60 minutes
Cool on baking rack for 10 minutes, remove from pan and cool for one hour
Freezes well

Make you own buttermilk by adding 2 tablespoons lemon juice or vinegar to milk, let stand for 10 minutes

Save ripe bananas for this recipe by peeling and mashing, then place in a gallon size freezer bag. Store flat in freezer. Take out of the freezer 30 minutes before using or pour warm water over the bag.......or just throw the frozen bananas in if you are in a hurry:)!
