Ingredients: Chicken Custard: 1 C. butter 1 C. sifted flour 4 C. chicken broth 1 C. milk 2 Tsp salt 4 slightly beaten eggs
Casserole: 1 large cooked chicken or turkey, diced. (About 4 Cups) 1 C. dry bread crumbs browned in 2 Tbls. Butter
Dressing: 3/4 C. chopped celery 1 Medium chopped onion 2 Tbls. chopped parsley 1/2 C. butter 6 C. bread stuffing cubes 1 Tsp. salt 1/8 Tsp. pepper 1/2 - 1 Tsp. poultry seasoning 3 Tbls. chicken Broth

Directions:Preheat oven to 350 degrees.
Chicken Custard: Melt the butter in a large saucepan. Blend in flour and stir. Gradually add chicken broth and milk, stirring constantly. Add salt Continue stirring constantly until mixture becomes very thick. Blend a little of the hot mixture into the beaten eggs. Add the eggs to the hot mixture. Cook over low heat 3 - 4 minutes.
Dressing: Saute the celery, onion and parsley in the butter for about 5 minutes. Add the vegetables to the stuffing cubes along with the salt, pepper and seasoning. Sprinkle with chicken broth and toss lightly. Turn into a greased 14 X 10-inch baking pan.
Cover the dressing with half the chicken custard. Distribute the chicken meat over the top. Pour remaining chicken custard over the top.
Sprinkle with the prepared bread crumbs. Bake in 350º oven for 20 - 25 minutes until chicken is thoroughly heated. |
