2 c. flour
1/2 c. sugar Apple Butter:
1 Tbsp. baking powder
1/2 tsp. baking soda 1/2 c. butter, softened
2 c. grated cheddar cheese 1/2 c. apple jelly
1 c. plain yogurt 1/4 tsp. cinnamon
1/4 c. melted butter or margarine
2 eggs, beaten

Directions:

Preheat oven to 375º.
Blend dry ingredients. Add cheese. Make well in the centre.
In other bowl, whisk yogurt, butter and eggs together. Add to dry ingredients all at once.
Stir until evenly moistened. Spoon into muffin tins. (Batter will be quite thick.)
Bake on centre rack for 15 minutes or so until golden.

To make apple butter, whisk ingredients until fluffy. Keep in fridge.

These are very versatile. They can serve as a breakfast muffin, go with soup and salad or replace biscuits with stew.
