Olive oil
chopped garlic
chopped onions or shallots
chopped tomatoes
green, red, and yellow bell peppers, chopped
portabella or crimini mushrooms, sliced
white fish fillets (I use red snapper)
chardonnay

Directions:
Directions:
Lightly brown chopped garlic in olive oil. Strain through a sieve, save oil back in pan and the brown chopped onions. Strain again and save the oil back to the pan. You may need to add more oil.
Rub some olive oil on the fish filets and bread them. I like to use Progresso, Italian Style Bread Crumbs.
Brown the filets in the oil.
When they are brown add the browned garlic, onions, cut up tomatoes, bell peppers and mushrooms.
Brown all lightly and add Chardonnay to cover all. Cover pan with a top and slowly saute all until fish filets are fully cooked.

I use shallots instead of onions when I'm feeling fancy.
