1 cup unsalted butter at room temperature
1/2 cup confectioner's sugar
2 1/4 cup all-purpose flour
1/4 tsp. salt
1 tsp. vanilla
confectioner's sugar, for dusting

Directions:
Directions:
1. Heat oven to 375ºF. Beat butter with wooden spoon in a bowl until creamy. Gradually beat in sugar until smooth. Beat in flour, salt, and vanilla; mixture will be stiff.
2. Pinch off small pieces of dough with slightly moistened fingers; roll into 1-inch balls. Place, 2 inches apart, on ungreased baking sheets.
3. Bake in 375ºF oven 13 to 14 minutes, until bottoms are golden. Do not let tops brown. Remove from sheet; roll in or dust with confectioners' sugar. If making ahead, dust with more sugar to serve.
