3/4 c raisins soaked in 2 c water for 2 hours
1 1/2 c sugar
4 1/2 T flour
1 1/2 T cornstarch
1/2 t salt
3 T lemon juice
1 1/2 t grated lemon rind
1 egg

Directions:
Directions:
Cook raisins for 10 minutes in water in which they were soaked. Pour over sugar and flour. Cook in a double boiler for 15 minutes. Add juice and rind. Beat egg and add a little of hot mixture; mix. The add the rest of the mixture and beat thoroughly. Cool. Pour in unbaked pie shell. Criss-Cross pastry on top. Bake 450º for 20 minutes.
