• 8 pieces chicken
• 1 tsp. ground allspice
• 1 tsp. ground cinnamon
• 1 tsp. dried thyme
• ¼ tsp. nutmeg
• 2 tsp. demerara sugar
• 2 garlic cloves, crushed
• 1 Tbsp. onion, finely chopped
• 1 Tbsp. green onions, chopped
• 1 tsp. vinegar
• 2 Tbsp. oil
• 1 Tbsp. lime juice
• 1 hot chili pepper, seeded and chopped
• Salt & fresh ground black pepper

Directions:

Combine all the ingredients in a bowl. Using a fork, mash them together well to form a thick paste. Lay the chicken on a plate or board and make several lengthwise slits in the flesh. Rub seasoning all over the chicken and into the slits. Place the chicken pieces in a dish, cover, refrigerate and marinate overnight.

Shake off excess marinade from chicken. Brush chicken with oil and place on baking sheet under preheated grill for 45 minutes turning often. Alternatively, grill on a barbeque over medium high heat for 30 minutes turning often until chicken is done. Serve hot
