Ingredients: 1 pkg. of Chicken Breasts or Hen 2 lg. cans Swanson Chicken Broth---Reserve 1c. for Dumplings 1 lg. Onion- diced 2 Stalks Celery- diced
Dumplings: 1c. Chicken Broth 1/2c. Milk 1/2 stick Butter....melted 3 tsp. Baking Powder 3 Eggs---beaten 1/2t. Salt 1-11/2c. Flour

Directions:Cook chicken in broth with celery and onion, until done. (15-20 minutes). Remove chicken from broth -cool- chop in pieces Continue to let broth simmer while making dumplings.
Dumplings: Add baking powder and salt to eggs and milk and stir in the cup of reserved broth, add enough flour (start with 11/2cups) to make very soft dough. Roll out on floured surface to very thin (1/8") Cut rolled out dough into 5"x1" strips. Bring broth to boiling (very important)-- Add 11/2 cups of milk to the broth Drop strips where you see the rapidly boiling spots in the pot, this will help keep them from sticking together. After all dumplings are added reduce heat to medium ( a little above simmer), cook until Dumplings are cooked and tender- start checking after 10-15 minutes. when done add chicken back to the pot. |

Notes: This is a big pot of dumplings, the recipe can be halved. This is a family favorite. Many of us remember asking Mom and Mama Faye to make them for us when we were growing up and later when we were home for visits.
