1/2 c. butter flavored shortening
1 1/2 c. sugar
1 1/2 c. firmly packed brown sugar
4 eggs
1 tsp. vanilla
2 c. chunky peanut butter
6 c. quick cooking oats
2 1/2 tsp. baking soda
1 c. semi-sweet chocolate chips

Directions:

Preheat oven to 350º. In a large mixing bowl, cream shortening and both sugars. On low speed, add eggs and beat until mixture is fluffy. Add vanilla and peanut butter. Mix well. Combine oats and baking soda in a separate bowl, then add to mixture, stirring by hand. Pour in chocolate chips and stir. Drop by 1/4 c. scoops, 4 inches apart, onto ungreased non-stick cookie sheet. Bake 12 to 15 minutes. Cool on wire rack. Makes large cookies.

I have to admit that I stole this recipe from one of my good friends in Mississippi, Lorrie Sims. She's one of the best cooks I know. And I absolutely love these cookies! (It might have something to do with the fact that I absolutely love peanut butter.)
