3/4 cup butter or margarine
3/4 cup granulated sugar
3/4 cup brown sugar, packed
1 egg slightly beaten
3/4 cup peanut butter (smooth or crunchy are fine)
1 teaspoon vanilla
1-3/4 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
granulated sugar to roll cookies in

Directions:
Directions:
Cream butter and sugars. Blend in egg, peanut butter and vanilla. Add flour sifted with baking soda and salt. Mix well. Chill 30 minutes in the refrigerator. Form rounded teaspoons of dough into balls, roll in sugar and place on an ungreased baking sheet. Bake at 375º for 10 - 12 minutes. Makes approximately 5 dozen cookies.
