Ingredients: 1 pound beef 1 T salad oil 1 cup chopped onion 1 tsp salt pepper to taste accent to taste 3 T uncooked rice Risotto (this works best is creamy) 1 can condensed tomato soup 1 cup water 3 cups chopped cabbage Savoy works best 1 can tomato juice
CROWD SIZE 3 pounds ground beef 3 T salad oil 3 cups chopped onion 3 tsp salt pepper to taset accent to taste usually 2 to 3 T 3 T uncooked rice risotto 3 cans condensed tomato soup 3 cups water 3 small heads Savoy cabbage 1 bottle tomato juice

Directions:brown beef in oil with onion season and rice. cook for 3 minutes add soup and water mix well when soup begins to boil lower heat and simmer for about 30 minutes until rice is done stir occasionally remove from heat place uncooked cabbage on the bottom of the casserole dish or baking tin pour meat mixture over cabbage do not stir pour tomato juice over top bur make pockets in mixture to allow it to saturate through cover tightly with aluminum foil and bake at 325 for 1 1/2 hours or until cabbage is tender allow t set for 1/2 hour before serving

Notes: risotto work better than long grain rice because it absorbs the fluids and becomes creamy Savoy cabbage has a better flavor in this dish and seems to become more tender
