Joyce's Sweet Potatoes Recipe

4 raw sweet potatoes
1 stick of butter
1 cup of brown sugar
1 bag large marshmallows

Directions:
Directions:
Boil sweet potatoes with skin on until softened.
Pull potatoes out and place on counter to cool.
Preheat oven 350º.
Once cooled peel skin, slice, and place on cookie sheet in one layer.
Place a dollop of butter on each slice along with a spoonful of browned sugar.
Bake in oven until butter and brown sugar are melted.
Pull out and place one marshmallow on each slice then place back in oven under broil until browned.

The first time I have had sweet potatoes like this was at my husbands grandmothers house. I have always been so so when it came to sweet potatoes. Growing up we only had them at Thanksgiving, which would always consist of sweet potato casserole our the traditional bowl with butter, brown sugar and covered with mini marshmallows. When I had Joyce's sweet potatoes for the first time I immediately fell in love.
