Ingredients: Apple Filling: 2 Tbsp. Butter 4 medium Apples, peeled, cored and cut into 8 slices each 1/2 C. Brown Sugar 1 tsp. ground Cinnamon
Popovers: 2 Eggs 1 C. Milk 1 C. Flour 1/2 tsp. Salt 1 tsp. Sugar 2 Tbsp. Butter, melted
Cream: 1 C. Cream Cheese, softened at room temperature 1-1/2 Tbsp. Brown Sugar

Directions:Apple Filling: Melt butter in a saucepan over medium-high heat. Add the apples, brown sugar and cinnamon, stir to coat. Cook uncovered for 20 to 25 minutes until apples are soft, but not mushy. Cool.
Popovers: In a large bowl, whisk the eggs and milk together. Add the flour, salt, sugar and melted butter, continue to whisk until a smooth batter forms. Grease a muffin tin (or popover tin) and fill with the cooked apple slices, dividing the apples between the muffin cups. Place in the oven and heat tin for 5 minutes. Remove from the oven and pour batter over the apples to fill cups 3/4 of the way full. Bake for 10 minutes at 425º, then reduce heat to 375º and bake for another 20 minutes until golden brown. Remove from oven and take the popovers out of the pan, using a spoon. Turn the popovers so the apples are on the top.
Cream: While the popovers are baking, beat the cream cheese and brown sugar together. Place in the refrigerator until needed.
Serve popovers warm with spoons of the chilled cream. |
