1/2 c water
1/2 white corn syrup
2 egg whites
1 t vanilla
1-2 drops of food coloring if desired
1/2 c chopped candied fruit or nuts (optional)

Many candies including divinity will not turn out if it is a humid day. A dry
day is better for candy making.
In a 2 qt heavy saucepan combine the sugar, water and corn syrup. Cook over medium heat until it boils. Then clip on the thermometer. Reduce heat a and continue cooking without stirring til hard ball stage, 260º. Usually 10-15 minutes. Adjust the heat as necessary to maintain a steady boil. Remove from heat. Remove thermometer. In a large mixing bowl,then beat the egg whites til stiff peaks form. Gradually pour hot mixture in a thin stream over the egg whites. Beat about 3 minutes, scraping sides of bowl. Add vanilla and coloring if desired. Continue beating til mix starts to lose its gloss about 6 minutes. When the beaters are lifted the mix should fall in ribbons that mound up and hold shape.
Then drop a spoonful of candy onto waxed paper. If it stays mounded it is ready. If not beat 1 1/2 minutes more. Check again. If it is too stiff and a
couple drops of water and beat in. Quickly drop the remaining candy onto the waxed paper. Store tightly covered.
