2 c sugar
1 t baking soda
1 c buttermilk
1/8 t salt
2 T butter
2 1/2 c pecan halves

In a 3 1/2 qt heavy sauce pan combine sugar, soda, buttermilk and salt. Cook over high heat about 5 min. Stir and scrape often. When at 210º
the mixture will foam up, add butter and pecans.
Over medium heat, continue cooking, stirring constantly and scrapping bottom and sides til the mixture is at 234º. Remove from heat cool slightly, about 2 minutes. Beat with a spoon til thick and creamy. Drop from
a T onto a sheet covered with foil or waxed paper.
