1 C. Flour
1-1/2 tsp. Baking Powder
1/2 tsp. Salt
2 Eggs, beaten
1/2 C. Milk
1 lb. Cheese Curds (There is enough batter to make up to 2 lb.)
extra flour for dredging cheese curds, ~ 1/4 C.

Directions:
Directions:
In a medium bowl, sift together the flour, baking powder and salt. Stir in the eggs and milk. Mix until smooth. If batter seems too thick, add a little bit of milk at a time, until you like the consistency.
In a plastic bag, add a little bit of flour and shake cheese curds or you can dredge the cheese curds in a little bit of flour.
Heat the oil to 350º in a deep fryer or heavy skillet over medium heat.
Drop a few cheese curds at a time into the batter and then place in the hot oil. Fry approximately 1 minute on each side, until golden brown.
Remove with a slotted utensil and drain on paper towels.
Repeat with remaining cheese curds. Be careful not to over cook.
