1/2 cup margarine or butter
2 eggs
1/2 cup milk
1 cup sugar
1 3/4 cup flour
1 tsp. baking powder
1/2 tsp. salt
Topping:
1/2 cup sugar
1 lemon rind grated fine and the juice

Directions:
Directions:
Cream butter and sugar until light and fluffy. Add eggs and beat well. Add other ingredients and pour into greased loaf pan. Bake at 325º for 45 minutes or until toothpick comes out clean. Immediately spoon topping on while still hot and still in pan. Let sit about 10 minutes, then remove from pan. Flavor improves if you age it a day.
