2 medium red peppers
2 cloves garlic
4 ozs. olive oil
Fresh basil
Sea salt

Directions:
Directions:
Preheat the oven to 425 degrees. Place the peppers in a roasting pan and place in the preheated oven. Roast the peppers until charred, turning occasionally, about 20 - 30 minutes. Remove from oven and place in a paper bag to cool, about 15 - 20 minutes. When cool, peel over the baking sheet to save the juices, removing stem and seeds. Cut into strips. Pour juices from roasting pan over the peppers. Peel and slice the garlic. Add to the peppers. Tear large pieces of basil and add to the pepper mix. Add salt and combine ingredients. Cover and refrigerate until ready to use.

These will last 3-4 weeks refrigerated. Great on a slice of crusty bread for a quick snack or light lunch!
