5 lb. beef
10 T salt
1/3 cup sugar
1/3 tsp baking soda
1 tsp. Salt Peter

Directions:
Directions:

Rub the brisket with dry mustard.
Combine with enough water to cover in an ice cream bucket.
Let stand for 2 - 4 weeks in fridge.

Drain.

Fill large stock pot with enough fresh water to cover. Add a bay leaf, a few peppercorns and whole cloves. Boil til cooked through
