3/4 c bulgar wheat
3 T fresh LIme Joice
1 medium tomato cut into 1/4" peices
1 scallion, finely chopped
1/4 c chopped parsley
1/4 c chopped cilantro
1 T olive oil
7 opunses aged goat cheese
3/4 t kosher salt
1/4 t cracked black pepper
4 whole wheat pita cut into wedges and toasted

Directions:

In a medium bowl, combine bulgar wheat, line joice and 3/4 c boiling hot water. stir to mix. Let stand 30 minutes.

Add remaining ingredients (except pita) and toss well. Refridgerate till chilled. Serve with pita wedges.
