2 (10 oz) package chopped spinach (fresh or frozen)
1 large onion-diced
4 eggs
3/4 cup butter-melted
1/4 teaspoon salt
1/2 teaspoon garlic powder
1/2 cup grated Parmesan cheese
2 cups Herb Seasoned Stuffing Mix

Directions:
Directions:
Cook spinach and squeeze out as much liquid as possible. In a large bowl, mix spinach with the rest of the ingredients. Chill in the refrigerator
for 1-2 hours. Shape into balls and place on a baking sheet. Bake in a 350 degree oven for 18-22 minutes. You can serve immediately or freeze the cooked spinach bites. When you are ready to serve reheat in the oven until warmed through.
