1 lb. ground beef
2 T. Crisco or oil
1 1/2 t. salt
1/4 t. pepper
1/3 c. bread cubes
1/4 c. minced onion
1 1/2 c. chopped cooked carrots
1/2 t. salt

2 T. milk
2 T. minced onion
1 egg

Directions:
Directions:
Combine beef, seasonings, bread, milk onion and egg listed under meat roll. Pat into a rectangle about 1/2" thick on waxed or parchment paper.
Prepare filling by browning onions in hot Crisco or oil; add cooked carrots and salt. Spread mixture over meat and roll meat as for jelly roll. Place on rack, seam side down in 9" x 13" pan and bake at 350º for about 45 minutes.

May make a gravy from drippings in pan and serve with meat roll.
