4 T. soy sauce
2 T. rice vinegar
1 1/2 tsp. sugar
2 1/2 tsp. toasted sesame seeds, divided
3-4 c. mixed baby greens
1/8-1/4 c. thinly sliced sweet onion
1/4# cooked, shredded chicken
2 T. prepared peanut dressing
Sprig of cilantro

Directions:

In a small bowl, combine soy sauce, vinegar, sugar and 1 1/2 tsp. sesame seeds. In a medium bowl, toss together greens, onion and desired amount of soy dressing. To serve, place the greens on a serving plate. Top with shredded chicken. Spoon peanut dressing over the chicken.
Sprinkle with remaining sesame seeds, and garnish with cilantro sprig. Serve with spring roll if desired.
