1 c soft butter
3/4 c sugar
1 c cooked mashed carrots
2 eggs
2 c flour
2 tsp baking powder
1/2 tsp salt
1 tsp vanilla
3/4 c coconut or nuts
Directions:
Directions:
Makes 40 cookies. Bake 350º for 8-10 minutes. When cool frost with orange icing.

Orange Icing:
1/3 c soft butter
3 c powdered sugar
3 tbsp orange juice
1 1/2 tbsp grated orange rind
