Ingredients: Crust
10-12 cookies (filling included) 3-4 tbsp butter, melted
Filling
3 - 8 oz pkgs cream cheese, softened 1 cup white sugar 2 cups whipping cream (divided) 24 Oreo cookies
Topping
1/2 cup cream 4 squares semi sweet chocolate 1/2 tsp vanilla

Use blender or food processor to reduce the cookies to a crumbled state. Combine crumbs and butter and press into bottom of a 9" spring form pan. Place crust in freezer while preparing filling.
Filling
Whip 1 1/2 cups cream very stiff. Place in fridge. With mixer whip cream cheese until smooth, add sugar blend thoroughly coarsely chop 24 cookies and fold into cream cheese mixture. Fold in whipped cream. Turn filling into frozen crust. Cover freeze at least 4 hours.
Topping
Melt chocolate in saucepan over low heat, stirring constantly. Remove from heat and allow to cool slightly. Whisk in cream and vanilla. Loosen cheesecake from spring form pan. Spread chocolate topping over top of cheesecake. Let stand at room temp until slicing is possible. |
