Personal Notes:
This is such a comfort food. Back in 2004 when we were getting hit with a Cat 3+ hurricane every 4-6 weeks, I made up a batch of this (between Charlie & Francis) and it became our dinner for those long days we were without electricity. It heats up easily in a pan. I froze parts of it and when Jean (the last hurricane) came through and knocked out electricity for a third time, we finished off the Mac & Cheese. I'm sure Dave was glad to see it go, but I can never get enough of this dish. Whenever we have to bring a covered dish, this is the one that goes and I never bring any leftovers home!
