Ingredients: 2C Elbow Macaroni 1stick butter 1/4C minced onion 3T flour 2C milk or light cream 1/2C dry white wine 2C grated sharp cheddar cheese 1/2C bread crumbs for topping Salt, Pepper, Cayenne, Paprika

Directions:Cook and drain macaroni and set aside. Saute pan, melt 1/2 stick butter. Stir in breadcrumbs and toast. Remove breadcrumbs and set aside Wipe pan clean. Melt remaining butter, add onions and stir until translucent. Stir in flour and seasonings. Continue to cook 2-3 minutes. Add wine and gradually stir in milk/cream. Simmer over low heat stirring until sauce is thickened and smooth. Add cheese and continue until melted. Combine macaroni, cheese sauce and turn into generously buttered casserole dish. Sprinkle extra grated cheese along with buttered breadcrumbs.
Bake 350º 20 minutes until heated through and bubbly. |

Notes: This is such a comfort food. Back in 2004 when we were getting hit with a Cat 3+ hurricane every 4-6 weeks, I made up a batch of this (between Charlie & Francis) and it became our dinner for those long days we were without electricity. It heats up easily in a pan. I froze parts of it and when Jean (the last hurricane) came through and knocked out electricity for a third time, we finished off the Mac & Cheese. I'm sure Dave was glad to see it go, but I can never get enough of this dish. Whenever we have to bring a covered dish, this is the one that goes and I never bring any leftovers home!
