3 or 4 egg white meringue:
3 egg whites
1/2 t vanilla
1/4 t cream of tartar
6 T sugar

1. Allow egg whites to stand at room temp for 30 min. In a large extra clean mixing bowl combine whites, vanilla and cream of tartar.
Beat with electric mixer n medium 1 min until soft peaks form. 2. Gradually add sugar, 1 T at a time, beating on high about 4 min. until mix forms stiff, glossy peaks. Stand straight. 3 Immediately spread meringue over hot pie, carefully sealing to the edge of the pastry to prevent shrinkage and to look pretty.
FOUR egg white meringue
4 egg white, 1 t vanilla, 1/2 t cream of tartar, 1/2 cup of sugar. Beat for about 5 min. following the other directions. Bake 350.º til golden.
