3 eggs
1 cup of liquid oil
2 cups of sugar
2 cups of grated zucchini
2 tsp. of vanilla
3 cups of flour
1 tsp. of salt
2 tsp. of soda
1/2 tsp. of baking soda
3 tsp. of cinnamon
1 cup of nuts (optional)
1 cup of raisins (optional)

Directions:
Directions:
Beat eggs until light and foamy. Stir in the rest of the wet ingredients. Add zucchini. Bake at 325º for 1 hour or until done. Be careful; it's very easy to burn this bread because it's so "thick".
