1 1/4 cups flour, divided
1/3 cup margarine
2 eggs, slightly beaten
3 1/2 cups chopped fresh or frozen rhubarb
1/3 cup powdered sugar
1 cup white sugar
1 tsp. vanilla

Directions:
Directions:
These squares are delicious warm or cold! Heat oven to 350º, in medium bowl, combine 1 cup flour with powdered sugar. Cut in margarine until mixture resembles coarse crumbs. Press into the bottom of a greased 9 x 13" pan. Bake for 12 to 15 minutes, or until light golden brown.
Next: While crust is baking, combine white sugar, remaining flour, eggs and vanilla. Stir in rhubarb; pour over warm crust. Bake for 30 to 40 minutes, or until a toothpick inserted near center comes out clean. Cut into squares and serve warm or cold with ice cream or whipped cream.
