1 1/2 cups sugar
3 tbsp. enriched flour
1/2 tsp. nutmeg(I don't use this) optional
1 tbsp butter
2 well beaten eggs
3 cups finely cut rhubarb(adjust to size of pan-I use 4 cups in big pie pan)

Directions:
Directions:
Blend sugar, flour, (nutmeg) and butter. Add eggs; beat smooth, pour over rhubarb in pastry lined pie tin. Top with pastry,( I use pastry cut in strips- weaved in lattice pattern). Sprinkle sugar & cinnamon on top of crust before baking. Bake in hot oven- 450º for 10 minutes ~ then in moderate oven 350º, about 30 minutes.
