4 eggs
2 cups sugar
1 1/2 cup salad oil
2 cup sifted flour
2 tsp. baking powder
1 tsp. salt
2 tsp. ground cinnamon
3 cup grated carrots (9 med.)
1 1/2 cup flaked coconut
1 1/2 cup chopped walnuts

Directions:
Directions:
Mix in order given. Beat well, fold in carrots, coconuts and walnuts. Bake 13 x 9 x 2" pan. Moderate 350º oven 25 to 30 minutes. Yields 6 1/2 dozen.
Cream Cheese Frosting: 1 oz. pkg cream cheese with 1 tbsp. half & half, add 2 1/2 cup powered sugar or whole milk to make frosting spreadable.
