Pepper Jack Meatloaf Recipe

1 lb. ground beef, turkey or chicken
1 c. celery diced
1/2 c. onion
1 c. oatmeal or crumbled saltine crackers
2 eggs
2 c. pepper-jack, shredded
1/4 c. ketchup
1/8 t. chili powder
salt & pepper

Directions:
Directions:
Preheat oven to 400º. Mix meat, celery, onion, oatmeal or crackers, eggs together well. Press 1/2 the meat mixture into prepared loaf pan. Place cheese over meat mixture. Top with remaining meat mixture and press to seal. Spread ketchup on top. Sprinkle with chili powder, salt and pepper. Bake covered lightly with foil for 30 minutes. Increase temperature to 425º. Uncover, bake 20 minutes or until edges are bubbling and knife comes out clean. Let sit for five minutes, slice and serve.
