6 medium size Idaho potatoes
1 medium yellow onion finely chopped
1/4 cup butter
1 T. flour
salt & pepper to taste
2 cups milk
2 cups shredded Sharp Cheddar Cheese
1/4 cup fine dry bread crumbs
Paprika
1/4 cup crumbled French Fried Onions

Directions:
Peal and Slice potatoes in thin circles, boil in big pot with 2-T salt. for 15 minutes. In sauce pan melt butter and saute onions until tender, stir in flour, salt and pepper cook flour until bubbly. Add milk and 1 1/2 cups cheese continue to stir until boiling. Drain potatoes and pour in 1 1/2 quart casserole dish. Pour cheese sauce over potatoes and cook in 325º oven for about 1 hour 20 minutes or until potatoes are tender. depends on how long you boiled them. Mix remaining cheese, bread crumbs, crumbled French Fried onions, paprika and corse ground pepper. Sprinkle this over the top then cook under broiler until toasty brown. Watch this part carefully don't let it burn.
