Sizzling Bacon-Wrapped Apricots with Cranberry Glaze Recipe

2 tsp cornstarch mixed with 2 tsp water
¾ tsp whole-grain mustard
1 ½ tsp packed brown sugar
½ tsp ground nutmeg
12 slices bacon, cut into thirds
18-24 dried apricots, depending on size*
1 ½ c. Ocean Spray 100% Juice cranberry juice blend

1. Boil cranberry juice blend in medium saucepan over med-high heat until reduced to one cup. (This takes about 10 minutes. If you boil it too long, just add regular juice to make up the difference.)

2. While still on the burner, whisk in the cornstarch mixture, brown sugar, mustard and nutmeg. Bring to a boil over medium heat and boil 1 inute until thickened.

3. Cool to room temp.

4. Meanwhile, wrap bacon pieces around apricots*. If the apricots are quite large, cut in half. Secure with toothpicks.

5. Put the wraps into a deep bowl, and pour the juice mixture over them. Place in the fridge for at least an hour, and no more than 3 hours.

6. When ready to bake, drain off the juice, and place the bacon wraps on wire racks. Bake at 400 or more for about 10 minutes. Check every few minutes so they don't burn.

Original recipe did not suggest marinating, and to just brush with the glaze before baking, and to keep some glaze aside for dipping later. I liked the way we did them as dipping sauce isn't necessary and they're less messy to eat.
