Ingredients: ~ 4 lbs onions, sliced 1/4 cup butter 8 c. or 2x 1L cartons of beef stock* ½ teaspoon Worcestershire sauce 1 bay leaf ¼ teaspoon thyme ½ tsp fresh ground garlic, opt. salt and pepper French bread (1 slice/bowl) Parmesan cheese (abt 2 TB/bowl) (opt) Mozzarella cheese, grated (about 1/3 c./bowl)

Directions:1. Over medium heat. sauté the onion in butter until soft and translucent and caramel coloured. Make this in 2 batches. 2. Place onions in slow cooker. 3. Important step: Deglaze cooking skillet with some of the beef stock: put about 1 cup of stock in each pan and simmer gently for 5 min. 4. Add this stock to slow cooker along with the remaining beef broth . 5. Add Worcestershire sauce, garlic, thyme and bay leaf. 6. Cover; cook on High for 4 hours or on low for 6-8 hours. 7. Add salt and pepper to taste. Remove bay leaf. 8. If freezing, cool for 1-2 hours then divide soup into appropriate containers. 9. To serve: for each serving, place 1-2 tbsp of parmesan cheese in bottom of individual oven-safe soup bowl; place one slice of toasted bread over the cheese; fill bowl with soup; top with mozza cheese; place under broiler to melt the cheese. Serve. Be careful as bowls will be hot. |

Notes: *Vegetable broth works well, too: taste is similar to using beef. This soup is wonderful for a winter meal, but everyone loves it in warmer weather, too!
