2 cups mashed potatoes (cooled & riced)
4 T melted butter/margerine (add more until consistency feels right)
1/2 tsp salt
1 cup white flour

Directions:
Cook potatoes and cool, or use leftover cooked/mashed potatoes. When cool, rice the potatoes into large bowl. Add rest of ingredients and mix to a smooth, soft dough. Let sit for 15-30 minutes. Roll thin using lots of flour on rolling surface. Roll thinner than pie dough. Fry in a very hot (electric) frying pan with no butter/margarine. Fry on one side until the bubbles turn a light brown. Flip over and cook other side. Stack in a plastic container with a damp tea towel on the bottom. When they are cool, they can be frozen.
These are eaten with butter and brown sugar sprinkled on them, roll them up like a tube & enjoy! Some use white sugar.
