Cake:
1 cup oil
2 cups sugar
3 eggs
2 tsp. vanilla
3 cups flour
1 tsp. salt
1 tsp. soda
1 cup pecans (optional)
3 cups Granny Smith apples, peeled and finely chopped

Glaze:
1 cup brown sugar
1/4 cup milk
3/4 cup butter
1 tbsp. cinnamon

Cake:
Cream together first 4 ingredients. Sift in flour, soda, and salt. Fold in pecans and apples. Pour into greased and floured tube pan. Bake @ 350º for 1 hour. Poke holes in cake with end of a wooden spoon.

Glaze:
Combine ingredients in a saucepan and bring to a boil, then cook an additional 3 minutes, stirring constantly.

Pour half of the glaze over warm cake while still in the pan. Allow to soak in a a bit. Turn cake out onto a LARGE platter. Pour remaining glaze over cake. As the glaze runs off onto the plate, use a cake spatula to spread the glaze up and around the sides of the cake.
