3 C. sugar
1/2 tsp salt
1/1/2 cup dairy sour cream
1 cup chopped dried apricots
2 tsp. vanilla
1 1/2 cup chopped walnuts

Directions:
Directions:
In heavy 3 quart sauce pan, combine sugar salt and pour cream and apricots. cook over medium heat till sugar is dissolved and mixture begins to boil
continue cooking till temp on candy thermometer reads 236 stirring occasionally.
Let cool 10 minutes. stir in vanilla and 1/2 c. walnuts. With wooden spoon beat vigorously for 1 minute. Refrigerate for 30 minutes. FOrm into small balls. 3/4 in is size. Roll in remaining 1 cup of chopped walnuts. cover and refrigerate. (store in refrigerate)
